Savory Beef Soup In the Crockpot
I am a huge fan of soups. (Except French Onion Soup. Gross.)
I am also a big fan of crockpot recipes.
This has become one of my favorite soup/crockpot recipes, and works so well this time of year with its mix of sweet potatoes and corn and basil. Yum. Start it cooking late morning/early afternoon and by 5:30-6:30pm you've got a good dinner.
2 cans of gluten free beef broth
2 cans of gluten free creamed style corn
1 lb very lean ground beef
3 smallish sweet potatoes, peeled and cut into bite sizes
3 tablespoons of tomato paste
Tablespoon of minced garlic
2 tablespoons Worcestershire sauce
2 heaping tablespoons of dried basil leaves or fresh basil to taste
1 tablespoon ground black pepper
Brown the beef with the garlic. Drain.
Mix with all the rest of the ingredients in a medium or large crockpot. (Mine's 4 qt. size.)
Cook on high 5-6 hours.
Serve with parmesan cheese and/or sour cream.
